It might also be to how close and far they were for the next level so if the dryad was at 90% of the level an Elisa was at 10% then the dryad level up one level an the 10% that she was missing while Elisa needed almost a full level for the first one and might be at 70-90% to the next in a sense since she is a bit lower level she got closer to 2 full levels while the dryad barley got more than one level worth of exp, at least that's how I interpreted it so it makes sense in my mind

Eliza was the lowest of them all at lv. 31, but her Forest Dryad jumped to levels to reach lv. 33.

I agree but at least with all the things he has to learn currently adding blacksmithing would be too much specially since forgemasters add magical properties to items and blacksmithing is not a must while learning the specialisation but I agree that the moment I start crafting my own things I would learn at least some blacksmithing and gold smithing to create my masterpieces

They mention once that there is other profesor that are not like the head lecturers (head lecturers like Vastor, Marth, Wanemyre, etc.) so like assistant professors that in the case of the novel are not named so I'm guessing that the main profesor and this assistant professors are the ones that the author is mentioning here

The Professors he worked with during that time became fond of his hardworking nature. Especially since Lith would never show conceit for the privileges they were forced to grant him, only respect and gratitude.
