Okay I may have misread your comment but I believe that people should be off-limits while animals etc are freegain then again of you aren't going the crossover route you can just make your own grimm to suit the need of what your mc needs

We've have only seen Winter, Weiss and Willow being able to only summon Grimm even though they have defeated humans and robots. The knight she fought is a Geist which was explained as a Grimm that possesses inanimated objects. In one of manga it is explained that the Arma Gigas was an experiment done by the SDC, it's a suit of armor possessed by Geists, which Jaques made Weiss fight the Arma Gigas as a test. So probably not but you are the author so you have the ability to choose me personally I don't believe weiss should be able to summon people she has defeated that would defeat the whole purpose of her arsenal of Grimm. Why would she ever use Grimm if she could just summon a construct of someone like ruby for example. So me personally I would stick with just Grimm and animals but again you are the author.
