Mai remembered one of her favorite classes from middle school. students at her school had been required to take a type of culinary class for home economics. To not be a waste of time for those who already understood the basics of cooking, the school had separated the class into a lower and upper division. The lower division focused on cooking basics, whereas the upper division was how to make common bought ingredients by hand.

The prof that year had just happen to return from a trip to France, where she had learnt about cheese, specifically how to make different types. To introduce her students to the interesting world of dairy products that you wouldn't find at a typical supermarket the prof had decided to teach them how to make a type of cream from milk by hand.
