As for why Jin and Gohan were able to grow this fast.
Simple, they there doing gravity training all this time.
But Jin's goal was not reached.
He wanted to hit the 20,000 mark in power level but could not.
At least he was able to change Gohan Timid's personality.

Goku was pretty surprised after seeing Gohan's improvement.
Jin from that point onwards solely focused on training his Ultra instincts.
So the rest of the year, Jin only stabilised his instincts and master the Ultra Instincts Sign with his new Saiyan Body.
