Triangles should have the strongest rigid structure (fixed lengths, fixed angles), whilst interlocked hexagons provide a level of pliability (fixed lengths, variable angles)

In this case Nick chose what he remembered as the strongest natural shape as the outside layer of his shields. Occlumency shields didn't need to be only single layer but rather could be as complicated or simple as the user liked.

Iroh invented lightning redirection but lightning generation was already a thing, though only Iroh, Ozai and Azula were shown to use it in ATLA, so I assume it's a secret royal/ high-noble technique. I'm guessing Zuko disseminated information on the technique before LoK, seeing how common it seems to be by then
