Deer wont work no matter how big they become, they like to skip when running so not much stability, their hooves are very narrow so not much traction and a greater risk of injury and falling if they are armored and carrying a rider. Moose (not elk) however are everything that a horse is but better. wide hooves, muscular, extremly stable and agile when running and they have no problem attacking first if they feel like it. there is even a real world example of moose cavalry, Sweden (i think) had their neibours shitting themselves when they found out they were experimenting with moose cavalry, unfortunately it was far to expensive and time consuming to breed and train moose so the idea was scrapped. Just get rid of their antlers and let them trample anything in the way.

Bad idea, wolves are forward leaning when running and will definitely end up throwing off anyone trying to ride one, use them as a terror tactic and to chase down enemies when they call for a retreat or flee. not to mention that a sadle and rider will pretty much cripple any chanse they have att fighting freely. Cats are specialized ambush predators, even the big once. They have no long distance endurance and will always flee confrontation unless cornered, use them for what they are good for, which in this case is ambush and tracking.
