Plus, knights would fight as part of a greater army, so their importance lies in the fact that they can quickly reinforce any section, basically being a walking platoon. With their concentrated strength they also make incredible guards and assassins who can cut through an army to reach the commander. This also means they can easily escape any encirclement if they're really trying to escape. So to truly kill a high-level knight that's trying to escape you would need at least 1000+ people forming a complete encirclement, as they would be spread around equally, and thus the knight will only have to fight 1/10 of the army to escape. Plus, I'm sure low-level knights are relatively common, at least a few hundred per army, and as long as they have the strength of 5 people, they could break any enemy formation they're up against. That is my ted talk.
