he does realize that if he doesn't create the army he's essentially killing millions of people....since he's from our world he knows the clones(not personally, but we've all watched the clone wars and bad batch) so by choosing the "moral high ground" he's stopping their creation. i can't remember what scene, but I remember one clone saying(when asked what he thought about the war) that he may not like the war but without it he and his brothers wouldn't have been created

dooku in my opinion was the "goodest" sith. he became a sith for selfless reasons, because of a corrupt government that he tried and failed to change from within....so he sought other methods. he didn't want power or influence, he just wanted a better galaxy. while Anakin always wanted power and he turned for selfish reasons.....palps is a pure evil character(killed his parents as a teenager)..... there are plenty of other sith, but none of them had "pure" goals like dooku.
