If you find yourself bored with writing cannon, then take time between the arcs for your own original mini ones, I personally think introducing HSR will make the story more convoluted and complicated than it needs to be. Some people also may not like me for saying this but if your having problems writing a lemon chapter just write a passionate scene leading up to it then say they did it and move on. Your writing quality is good and a poorly written lemon would just break the immersion. That's just my thoughts, lll read whatever you write.

He does not not have any of the Noble Phantasm's or skills from Fate/Stay. He simply possess Achilles knowledge related to martial arts, weapons, and the like.

So he doesn't lose his abilities at night? That kind of sucks the fun out of Escanor, sunshine no weakness has been done a hundred times and it just turns him into a one punch man which takes all the fun out of fights. Just my opinion.

It's not any specific part it's just the type of novel it is, It's nothing too deep or serious and it's meant to be fun, what I mean by turning your brain off is not because of bad writing but because overthinking will ruin the story.
