Just like we westerners associate colors with emotions (green with envy, yellow with lealousy, red with anger and love and so on) China and a lot of other east Asian countries associate black and white faces (sometimes badly translated as African and European) with different temperaments. I believe it's stems from peasants working in the sun and their skin darkening , while aristocrats could stay in the shade and therefore had a lighter skin colour. Like the myth of aristocrats or royalty having "blue blood" in Europe
